This year make this easy bunny cake for Easter. You don’t have to have fancy tools or professional skills. Not only will your kids love helping to decorate the coconut Easter bunny cake, it will be a beautiful centerpiece for your Easter dinner table. So let’s get started.
How to make an Easter Bunny Cake
You will need the following ingredients:
CAKE:
- 1 cake mix, flavor of your choice, I chose white
- Ingredients as called for on the package ( probably 2-3 eggs, oil or butter, & water)
Prepare and bake the cake as directed on the package using 2 round 8” cake pans. Spray the pan with a baking cooking spray or grease & flour the pans so the cake will release from the pan easily. When the cake is done, remove from oven. Let the cake cool for 5 minutes then turn them out onto wire racks to cool.
GREEN GRASS:
- 1-2 cups coconut (depending on how much grass you want )
- Green food coloring
While the cake is baking, color about 2 cups of coconut green by adding several drops green food coloring. Stir well or give it a good shake to mix the color. If you want a darker green, add more coloring.
BUNNY EARS:
- 4 Paper plates
- Pink or red Crayons
- Wooden skewers or plastic straws
- tape
While the cake is cooling, decorate the bunny ears. Draw a nice bunny ear shape onto a paper plate. Cut it out. Use the first ear as a template for the other ears to help ensure that the bunny ears are the same size and shape. Place the template on the other paper plates and trace around it. Cut out the ears. With the crayon, lightly color in the inside of the bunny ear. When the ears are complete, tape the wooden skewers or straws to the back. If they are too long, you can cut them down.
WHISKERS:
- A few Chinese noodles
- Chocolate wafers or chocolate chips
Melt the chocolate chips in a microwave safe container. Gently add the Chinese noodles to coat. Lay the chocolate covered noodles out to dry.
BUNNY:
- 2 cans 16 oz white ready made frosting (save about 1 TBSP)
- 2 pre-packaged white Snowball cupcakes
- 4 cups of white coconut
After the cakes are cooled, cut each one in half. Frost half of the cake and place the other half on top. Turn the cake right side up and stand it on the plate. Frost the outside of the entire cake. Add some frosting to the bottom on a Snowball cupcake and stick on the back end of the cake for a tail. Each bunny will take about 1 can of frosting. When finished frosting, liberally sprinkle and gently press the coconut into each bunny.. Cut dark jelly beans in half and use for the eyes and nose. Use a little bit of frosting to attach the whiskers and eyes if necessary
TIP: To keep the cake plate clean and to easily remove the extra coconut, place strips of waxed paper right up next to each cake before you begin to frost it. Add the coconut and press into the bunny. When you are finished, gently remove the waxed paper.
FINAL ASSEMBLY:
Stick in the bunny ears. Trim length of skewer or straw if needed. Surround the bunnies with the green coconut grass. Add some jelly bean Easter eggs.
Your Easter bunny cake is finished. It was easy. And it will make a beautiful centerpiece for your Easter dessert table.
