Self Frosting Cupcakes

I’m Wendy, one of the co-founders of EVMG but my passion is cooking so most days you can find me over at Around My Family Table sharing easy recipes that the whole family will love.  I started thinking….I’ve been here for over two years and haven’t shared one single recipe.  Well, that’s changing today with these super easy Self Frosting Cupcakes.  This is totally perfect for a busy mom plus they look fabulous too!

Self Frosting Cupcakes

Everything goes into the oven at once and comes out perfect.  No need for a seperate frosting because the frosting is baked into the cupcake.  So good!  So easy! So perfect for everyone!  I can see taking these to my daughter’s class for her birthday celebration next week, to the Christmas potluck, and the next big family get together.

If you don’t follow AMFT then you don’t know that I’m dairy free, egg free, and gluten free.  That means all of my desserts are vegan.  STOP…Don’t run away.  I promise you can make these for your dairy eating friends too.  I use egg replacer for the eggs and soy-based “butter” and a vegan cream cheese alternative from Tofutti (I love their stuff).  I totally want you to give their products a try, my family used to use them even before I had to switch to dairy alternatives.  I’m not paid to use their products in my recipes, but I love them so I do.  They are, however; providing this awesome giveaway for you…so keep reading after the recipe for all the details!

Self Frosting Cupcakes

You can find Tofutti products in most stores or on Amazon.  For a truely vegan cupcake, you will need egg replacer as well, which is easily found on Amazon too.  Lastly, you can’t use butter, but rather soy baking sticks…they taste and work just like butter!

Self Frosting Cupcakes & a Giveaway
 
Ingredients
  • 16 oz Tofutti Better than Cream Cheese, softened
  • 2 eggs or equivelent egg replacer
  • ½ cup sugar
  • Favorite Vegan Cake Recipe or Mix, prepared as directed
Instructions
  1. Line muffin pans with 24 cupcake liners and lightly spray with non-stick cooking spray. Preheat oven according to cake directions.
  2. Cream the cream cheese, eggs, and sugar together until well combined. Fill muffin tins about ⅔ full with prepared cake batter. Drop a spoonful of cream cheese mixture onto the top of each cupcake.
  3. Bake as cupcakes as directed on cake recipe. Remove from oven and cool completely before enjoying.

    I want to try the Jumbo Cheese Ravioli, but none of the stores near me carry it. I own stock in Tofutti Brands. I usually buy their products when I see them in the stores.

  13. I would love to try the frozen Cafe Latte Bars! We have tried their Yours Truly Novelty cones and they are awesome! Taste like a regular Nutty Bar Cone, We get the yours Truly Cones when we travel out of town where they are available and we take an ice chest with us to get them safely home.
