I love cooking with fresh herbs and spices and will frequently buy big bunches at the grocery or farmers market intending to use them throughout the week.  However, I will often find that my good intentions have led to the mid-week discovery of sad, wilted herbs going bad at the bottom of my vegetable drawer. Try as I might to use everything quickly, I never seem to succeed. I have also gone to so far as to grow my own herbs, but my plants never seem to yield enough for cooking. Needless to say, I was very excited to try several Gourmet Garden products that have solved this problem for me. Gourmet Garden herbs and spices are washed, chopped, blended and packed into tubes so they maintain their fresh taste for up to 3 months. The tubes can also be frozen for an even longer shelf life. 

Gourmet Garden

I wanted to try several of the herbs and spices and found inspiration on the Gourmet Garden website to create classic flavor profiles for different cuisines. My family loves Thai, so I took their suggestion in using the Chili Pepper, Lemongrass, Ginger and Cilantro together. Thai Coconut Soup was the result. Everything was delicious and came together so quickly. I took just a minute to wash and chop my veggies, but you could easily get a bag of carrots and broccoli or use whatever vegetables you already have. I think mushrooms and bok choy might be exceptionally yummy. My Thai Coconut Soup is a vegetarian meal, but it would be great with chicken added. With the rice noodles it’s also gluten free.

Thai coconut soup is a comforting dish with a lot of versatility that makes it perfect for a quick dinner. The creamy texture of the broth and blend of herbs and spices bring to mind the nostalgia of a great chicken noodle, but with a Thai twist. I hope you enjoy my version of Thai Coconut Soup.     15 Min suppers would be perfect for me, as I’m so busy all the time that by the time I get home we have maybe an hour to eat and go to bed, so 15 min would give us the other 45 to eat together and eat healthy.

  4. I love that it’s GF- the rice noodles are a nice addition! I’ve frozen the Gourmet Garden tubes and they work great- just need a little extra effort to squeeze.

    I love the idea of 15 min suppers and having herbs around that require only a squeeze is a huge help in getting quick tasteful meals with variety on the table on a weeknight.
