Cinnamon Apple Parfait

Cinnamon Apple Parfait

For Valentine’s Day, why not surprise your little valentines (or your big Valentine) with this delightful Cinnamon Apple Parfait?  With just 5 ingredients, it is a simple apple dessert recipe that just takes a few minutes on the stove.  The secret is using Red Hots cinnamon candy to sweeten and color the apples.  The longer the apples simmer, the deeper the red coloring. To get a really deep red coloring, just add more candy. Cinnamon Apple Parfait is fun to look at, fun to eat, and the beautiful red and white colors make it the perfect Valentine’s Day delight.

Cinnamon Apple Parfait

4 apples, such as Granny Smith or other firm cooking apple

1/2 cup water

1/2 – 1 cup Red Hot cinnamon candy

1 TBS of red jello (opt)

1 (8 oz) container of whipped topping

In a saucepan, add  1/2 cup of Red Hot cinnamon candy and the water.  Heat over a medium heat to begin melting the candy.  Peel, core, and chop the apples into small, bit-size chunks. Add the apples to the water and stir to cover all of the apples. Let simmer on a low heat until the apples are tender and the water is boiled down, about 1/2 hour.  To get a deep red color, add more of the candy. If desired, add 1 TBS of red jello to help the apples thicken and add even more color. When the apples are tender, take off of the stove and let cool slightly. In parfait glasses, add a layer of apples. Place into the refrigerator for 10 – 15 minutes to let cool and gel. Add a layer of whipped topping, then another layer of apples. Let this layer cool and gel in the refrigerator for another 10-15 minutes. Top with a final layer of whipped topping and a few red hots for interest.  Store in the refrigerator until time to serve. Makes 4 parfaits.
